2 Cans (5 oz) Solid white albacore tuna in water, drained
¼ Cup Red onion, finely chopped
3 Tbsp Capers, drained and coarsely chopped
2 Tbsp Fresh dill, chopped plus additional for garnish (optional)
Add garnish, if desired
Directions:
Cook penne according to package directions; during the last 3 minutes of cooking, stir in asparagus and carrots. Drain penne mixture; rinse with cold water until cool.
In a large bowl, whisk mayonnaise, lemon juice, mustard, salt, and pepper; fold in tuna, onion, capers, dill, and penne mixture. Makes about 6 cups.
Serve pasta salad garnished with dill, if desired.
