Spanish Rice Bowl

It’s a super simple one-pot authentic recipe that will quickly become your favorite. Very flavorful, plant protein-rich bowl and done just under 8 minutes! This hearty, simple rice is the ultimate side dish to serve with any meal!

Ingredients :

  • 1 tsp olive oil
  • 1 cup Best Yet® sweet corn kernels, canned 
  • 1/2 tsp Best Yet® chili powder
  • 1 tsp Best Yet® onion powder
  • 1/3 cup Best Yet® canned tomatoes
  • 1 cup Best Yet® black beans, canned
  • 2 cups Best Yet® instant rice, cooked
  • 1/4 cup fresh cilantro, minced

Directions:

  1. Preheat pan with olive oil. Add sweet corn kernels, and sprinkle with chili and onion powder. Sauté for 2 minutes. 
  2. Add canned tomatoes, beans, and rice. Reduce heat to low and simmer for 5 minutes.
  3. Divide the Vegetarian Spanish Rice in between two serving bowls. Add salt to taste, and top with fresh cilantro. 
  4. Serve and enjoy!
