Loaded Guacamole

If you are looking for a fabulous breakfast or party appetizer, learn how to make this absolutely delicious guacamole! This recipe is loaded with avocados, bell peppers, crunchy cucumbers, and plenty of lime juice. Delicious bits of caramelized pan-dried corn add a special touch and flavor to this guacamole!

Ingredients :

  • 2 tsp olive oil
  • 1 ½ cup Best Yet® sweet corn kernels, canned 
  • 1 tsp Best Yet® onion powder
  • 3 large limes, juiced
  • 7 large avocados
  • 1 Tbsp Best Yet® Everything Bagel Seasoning 
  • 1 small cucumber, diced
  • 1 red bell pepper, diced
  • 2 cups Best Yet® Corn Chips

Directions:

  1. In a medium skillet, heat oil over medium-high heat. Add corn kernels, onion powder, and sauté them for 2 minutes. 
  2. Remove corn from the heat, drizzle with lime juice, and set aside. 
  3. Slice the avocados in half lengthwise, remove the pits, and scoop into a large mixing bowl. 
  4. Mash the avocados using a fork until they reach a slightly chunky consistency. Sprinkle with Everything Bagel Seasoning
  5. Add corn, cucumber, bell pepper, and stir to combine. 
  6. Give the guacamole a taste, and season with salt if needed. 
  7. Serve this Loaded Guacamole with corn chips!
